I am just learning the game.  So, I would like to be able to save and replay various quick battles.

It would save me time if I didn't need to recreate things from scratch.

Is there anyway to set one up and then do SAVE AND EXIT and preserve it under a name such that it can be reloaded?

When you are done with a Quick Battle, it should save the map and the units you were using on it (I think), but I don't think you can save things mid-battle. You can save campaigns - in one slot and that's it, so if you mess up it's a real pain. The only workaround is to go into the directory and save the file in the save slot somewhere else so you can put it back again later if you don't like the way things pan out. It's cumbersome but works and there is another thread here ("Save games?") about that. I used to do that a lot when I was learning too.
The lack of proper save slots is very frustrating...
